Ingredients
- 1 tbsp (15 ml) vegetable oil
- 1 medium onion, chopped
- 1 (946 ml) container chicken broth
- 1 medium head cauliflower, chopped into small florets
- 1 (454 g) package aged Cheddar cheese
- 5 cups (1.2 L) milk
- 1/2 cup (60 g) all-purpose flour
- salt and ground black pepper to taste
Instructions
- Heat vegetable oil in a large saucepan over medium heat.
- Add the chopped onion and sauté until it becomes soft, about 3 to 5 minutes.
- Pour in the chicken broth and add the cauliflower florets; let it come to a boil.
- Lower the heat a bit; allow it to gently cook until the cauliflower is soft, approximately 20 to 30 minutes.
- In the meantime, shred the aged Cheddar cheese. In a separate bowl, combine the milk and all-purpose flour by whisking them together.
- Once the cauliflower is soft, gradually incorporate the milk-flour mixture, stirring to blend. Let it cook until the soup becomes thicker, around 5 minutes.
- Remove from heat, and stir in the Cheddar cheese until it is fully melted and integrated; season the soup with salt and ground black pepper as desired.
