Ingredients

  • 1 lb (454 g). Mexican chorizo, beef ($2.64)
  • 20 oz (567 g). queso quesadilla, shredded ($5.51)


Instructions

  1. Begin by setting your oven to a temperature of 300°F. If the chorizo has a casing, remove it, and use the largest holes of your box grater to shred the cheese.
  2. Place an oven-proof skillet over medium heat and pour in the cooking oil. Sauté the chorizo for about 7 to 8 minutes until its fat has melted and the sausage is foamy.
  3. Pour off the excess fat from the skillet, keeping 3 tablespoons of chorizo aside for later decoration. If the chorizo is particularly oily, lay it on paper towels first to absorb extra fat, then return it to the pan. Sprinkle the shredded cheese over the chorizo.
  4. Transfer the skillet to the oven and bake for 5 to 7 minutes until the cheese is fully melted and bubbling. Remove the skillet and place it on a heat-resistant surface, add the reserved chorizo as a topping, and serve right away.
