Ingredients

- 3 large eggs, at room temperature
- 1 cup (226g) pumpkin puree
- 1/4 cup (4 Tbsp; 56g) vegetable oil
- 1/4 cup (50g) packed light or dark brown sugar
- 1/4 cup (60ml) fruit syrup
- 1 teaspoon (5 ml) pure vanilla extract
- 1 and 1/2 cups (360ml) whole milk, at room temperature
- 3/4 cup (90g) pecan halves
- 1 and 1/2 cups (360ml) fruit syrup
Instructions
- Begin by setting your waffle iron to medium-high and heating the oven to 200°F (93°C). Prepare a baking sheet with a wire rack on top and set it aside.
- To prepare the batter, take a large bowl and combine the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, ginger, and salt by whisking them together thoroughly. Set this mixture aside for now.
- In a separate large bowl, use a hand mixer, stand mixer with a whisk attachment, or whisk strongly by hand to beat the eggs until they are frothy, taking about 1–2 minutes. Add the pumpkin puree, vegetable oil, brown sugar, fruit syrup, vanilla extract, and whole milk to this mixture, and blend on medium speed until everything is incorporated smoothly. Gently mix the dry ingredients with the wet ingredients on a low speed until just blended, ensuring you don’t overdo it; small lumps are acceptable.
- Prepare the waffle maker by coating it with a nonstick cooking spray. Pour approximately 1/3 cup of batter into each section of the waffle iron (adjust if your waffle maker is smaller) and close the lid. Cook for about 5–6 minutes until the waffles are crispy, following the specific guidelines for your appliance. Place finished waffles on the wire rack and keep them warm in the oven while you continue with the rest of the batter.
- While the waffles are cooking, prepare the optional pecan topping by placing pecans in a saucepan or skillet over medium-low heat. Toast them for 4–5 minutes, stirring continuously to avoid burning. When they begin to emit a nutty fragrance, reduce the heat to low and add the fruit syrup. Let it warm for a minute on the stove, then remove from heat.
- Present the waffles immediately, topped with the warm pecan mixture or your preferred toppings.
