Ingredients

  • 1 tablespoon vegetable oil (15 ml)
  • 1/2 cup chopped onion (120 g)
  • 1/2 cup chopped celery (75 g)
  • 3 cups cooked chopped turkey (450 g)
  • 2 jars (12 oz each) beef gravy (340 g each)
  • 1 package (12 oz) mixed vegetables (340 g)
  • 1/4 cup canned pumpkin (not pumpkin pie mix) (60 ml)
  • 1 teaspoon dried Italian herbs (1 g)
  • 1/2 teaspoon pepper (1 g)
  • 2 1/4 cups Original Bisquick™ mix (270 g)
  • 2/3 cup milk (160 ml)
  • 1/4 cup canned pumpkin (not pumpkin pie mix) (60 ml)
  • 1/4 teaspoon dried Italian herbs (0.5 g)

Instructions

  1. Preheat the oven to 350°F (175°C). In a large skillet, warm the vegetable oil over medium-high heat; sauté the onion and celery for around 2 minutes. Incorporate all other filling components, stirring well. Transfer the mixture into a 9×12 inch baking dish.
  2. In a separate bowl, combine the Bisquick mix, milk, pumpkin, and herbs, mixing thoroughly until smooth. Drop spoonfuls of this dough over the turkey mixture in the dish.
  3. Bake without covering for 45 to 55 minutes or until the biscuit layer turns golden brown. Allow to sit for 10 minutes before serving.

Notes

  • Consider using whole wheat Bisquick mix and low sodium beef gravy to reduce overall sodium content.
  • Add mushrooms, bell peppers, or peas for added nutrition and texture.
  • Customize flavor with different herbs and seasonings like smoked paprika or cayenne.
