Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup dark brown sugar, lightly packed (or light brown sugar)
- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 large eggs
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1½ cups all-purpose flour
- 6 Tbsp unsalted butter, melted (for streusel topping)
- 3/4 cup all-purpose flour (for streusel topping)
- 1/2 cup brown sugar (light or dark, for streusel topping)
- 1/2 tsp pumpkin pie spice or ground cinnamon (for streusel topping)
- 1 cup confectioners’ sugar (for glaze)
- 1/4 tsp maple extract (or vanilla, for glaze)
- 1 Tbsp maple syrup (for glaze)
- 1 Tbsp milk or cream (for glaze)
Instructions
- Preheat your oven to 350°F. Grease your loaf pan liberally or line it with parchment paper and grease.
- In a large bowl, cream together the softened butter and brown sugar with a handheld electric mixer for about one minute until smooth.
- Add the pumpkin puree and mix well. Follow by adding the eggs one at a time, ensuring you mix well after each addition.
- Gradually add the spices, baking soda, baking powder, salt, and flour to the mixture. Mix on low speed until just combined. Avoid over-mixing to keep the bread tender.
- Pour the batter into the prepared loaf pan, spreading it in an even layer.
- For the streusel topping, combine melted butter, flour, brown sugar, and pumpkin pie spice in a medium bowl. Mix until it resembles wet sand.
- Sprinkle heaping handfuls of the streusel over the top of the batter evenly.
- Bake in the preheated oven for 55-60 minutes. A toothpick inserted near the center should come out clean or with a few moist crumbs.
- Allow it to cool completely on a wire rack before glazing.
- For the glaze, whisk together confectioners’ sugar, maple extract, maple syrup, and milk until smooth. Drizzle over the cooled bread.
Notes
Ensure to check for doneness with a toothpick and adjust baking time as needed. Enjoy warm or at room temperature.
