Ingredients

  • 2 cups old-fashioned oats (480 ml)
  • 1 cup raw pecan halves (240 g)
  • 1 cup raw pepitas (pumpkin seeds) (240 g)
  • 1/4 cup maple syrup (60 ml)
  • 1/4 cup melted vegetable oil (60 ml)
  • 1/4 cup pumpkin puree (60 ml)
  • 1 1/2 teaspoons (8 ml) pumpkin pie spice, store-bought or homemade
  • 1/4 teaspoon (1 ml) vanilla extract
  • 1/2 teaspoon (3 ml) salt
  • (optional) 1/2 cup (120 ml) shredded or shaved coconut
  • (optional) 1/2 cup (120 ml) dairy-free white or semisweet chocolate chips


Instructions

  1. Preheat your oven to 350°F. Prepare a large baking tray by either spraying it with cooking spray or covering it with parchment paper. Keep it aside for now.
  2. In a sizable bowl, mix together the oats, pecans, and pepitas. In another bowl, blend the maple syrup, melted vegetable oil, pumpkin puree, pumpkin pie spice, vanilla extract, and salt until the mixture is smooth. Drizzle this mixture over the oat blend and stir until everything is well combined.
  3. Evenly distribute the granola mixture on the prepared baking tray. Bake it for 15 minutes. Take it out of the oven, mix in the coconut if you’re using it, and stir everything well. Place the granola back in the oven and bake for another 10-15 minutes, or until it turns golden brown. Remove it from the oven and let it cool to room temperature. Mix in the chocolate chips if desired.
  4. You can enjoy it right away or store it in an airtight container for up to two weeks.
