Ingredients
- – 1/2 cup (120 ml) vegetable oil, melted, cooled to room temperature
- – 1/2 cup (100 g) light brown sugar
- – 1 1/2 cups (180 g) all-purpose flour
- – 1/2 teaspoon (3 ml) baking soda
- – 1/2 teaspoon (3 ml) baking powder
- – 1/4 teaspoon (1 ml) salt
- – 1 teaspoon (5 ml) ground cinnamon
- – 1/4 teaspoon (1 ml) ground cloves
- – 1 1/2 cups (360 g) pumpkin pie mix from a can, not puree
- – 1 large egg
- – 1/2 teaspoon (3 ml) pure vanilla extract
Instructions
- Prepare an 8-inch square baking dish by applying grease to the bottom and sides. Line it with parchment paper and set it aside.
- Set your oven to preheat at 375°F.
- Heat the vegetable oil in a microwave or on a stovetop until melted, then let it cool to room temperature.
- In a medium-sized bowl, combine the flour, light brown sugar, baking soda, baking powder, cinnamon, cloves, and salt by whisking them together.
- Add the cooled, melted vegetable oil to these dry ingredients and stir until a crumbly dough is achieved.
- Keep aside about ¾ cup of this crumbly mixture to use as a topping later.
- Press the remaining dough firmly into the prepared baking dish, then set it aside.
- In a large bowl, mix the pumpkin pie mix, egg, and vanilla extract until everything is well blended.
- Pour this mixture over the pressed crust.
- Evenly distribute the reserved crumbly mixture on top.
- Place in the oven and bake for 28 to 32 minutes, or until the top turns a golden brown color.
- Allow it to cool completely in the baking dish before cutting it into square pieces.
