Ingredients

  • – 1/2 cup (120 ml) vegetable oil, melted, cooled to room temperature
  • – 1/2 cup (100 g) light brown sugar
  • – 1 1/2 cups (180 g) all-purpose flour
  • – 1/2 teaspoon (3 ml) baking soda
  • – 1/2 teaspoon (3 ml) baking powder
  • – 1/4 teaspoon (1 ml) salt
  • – 1 teaspoon (5 ml) ground cinnamon
  • – 1/4 teaspoon (1 ml) ground cloves
  • – 1 1/2 cups (360 g) pumpkin pie mix from a can, not puree
  • – 1 large egg
  • – 1/2 teaspoon (3 ml) pure vanilla extract


Instructions

  1. Prepare an 8-inch square baking dish by applying grease to the bottom and sides. Line it with parchment paper and set it aside.
  2. Set your oven to preheat at 375°F.
  3. Heat the vegetable oil in a microwave or on a stovetop until melted, then let it cool to room temperature.
  4. In a medium-sized bowl, combine the flour, light brown sugar, baking soda, baking powder, cinnamon, cloves, and salt by whisking them together.
  5. Add the cooled, melted vegetable oil to these dry ingredients and stir until a crumbly dough is achieved.
  6. Keep aside about ¾ cup of this crumbly mixture to use as a topping later.
  7. Press the remaining dough firmly into the prepared baking dish, then set it aside.
  8. In a large bowl, mix the pumpkin pie mix, egg, and vanilla extract until everything is well blended.
  9. Pour this mixture over the pressed crust.
  10. Evenly distribute the reserved crumbly mixture on top.
  11. Place in the oven and bake for 28 to 32 minutes, or until the top turns a golden brown color.
  12. Allow it to cool completely in the baking dish before cutting it into square pieces.
