- 1 cup pumpkin puree (240 g)

- 3 tablespoons (45 ml) brown sugar
- 2 teaspoons (10 ml) baking powder
- 1 teaspoon (5 ml) baking soda
- 1 teaspoon (5 ml) ground allspice
- 1 teaspoon (5 ml) ground cinnamon
- 1/2 teaspoon (3 ml) ground ginger
- 1/2 teaspoon (3 ml) salt

Instructions
- Collect all the necessary items for the recipe.
- In a large mixing bowl, blend together the milk, pumpkin puree, egg, vegetable oil, and vinegar until the mixture is smooth and well-integrated.
- In another bowl, combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt, then gradually incorporate this dry mixture into the pumpkin blend, stirring until just mixed.
- Lightly coat a griddle or frying pan with cooking spray and warm it over medium-high heat. For each pancake, pour 3 to 4 tablespoons of the batter onto the hot surface and gently spread it out with a spoon.
- Cook the pancakes until you see tiny bubbles forming on the surface, which should take around 2 minutes.
- Turn them over and continue cooking until they achieve a golden brown color, roughly another 2 minutes. Repeat these steps with the remaining batter.
