Ingredients

  • 1 cup pumpkin puree (240 g)

  • 3 tablespoons (45 ml) brown sugar
  • 2 teaspoons (10 ml) baking powder
  • 1 teaspoon (5 ml) baking soda
  • 1 teaspoon (5 ml) ground allspice
  • 1 teaspoon (5 ml) ground cinnamon
  • 1/2 teaspoon (3 ml) ground ginger
  • 1/2 teaspoon (3 ml) salt

Instructions

  1. Collect all the necessary items for the recipe.
  2. In a large mixing bowl, blend together the milk, pumpkin puree, egg, vegetable oil, and vinegar until the mixture is smooth and well-integrated.
  3. In another bowl, combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt, then gradually incorporate this dry mixture into the pumpkin blend, stirring until just mixed.
  4. Lightly coat a griddle or frying pan with cooking spray and warm it over medium-high heat. For each pancake, pour 3 to 4 tablespoons of the batter onto the hot surface and gently spread it out with a spoon.
  5. Cook the pancakes until you see tiny bubbles forming on the surface, which should take around 2 minutes.
  6. Turn them over and continue cooking until they achieve a golden brown color, roughly another 2 minutes. Repeat these steps with the remaining batter.
