A healthy and high-protein Pumpkin Cottage Cheese Bake that’s perfect for fall gatherings and family meals.
Ingredients
- 2 cups (16 oz) cottage cheese
- 3 large eggs
- 1 cup pumpkin puree
- ½ cup rolled oats or almond flour
- ½ cup maple syrup or brown sugar
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish lightly.
- Whisk together the cottage cheese, eggs, pumpkin puree, maple syrup, and vanilla until well-combined.
- Stir in the oats or almond flour, pumpkin spice, and baking powder until thoroughly blended.
- Pour the mixture into the prepared baking dish and smooth the top for even baking.
- Bake for 40–45 minutes until the center is set and a toothpick inserted comes out clean.
- Let cool before slicing and serving.
Notes
For extra flavor, consider adding a pinch of nutmeg or additional spices. This bake can be stored in the fridge for up to a week or frozen for longer storage.
