  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 2 (15 ounce) cans kidney beans, drained (425 g each)
  • 1 (46 fluid ounce) can tomato juice (1.36 L)
  • 1 (28 ounce) can peeled and diced tomatoes with juice (794 g)
  • 5 cup (120 ml) canned sweet potato puree
  • 1 tablespoon (15 ml) pumpkin pie spice
  • 1 tablespoon (15 ml) chili powder
  • 25 cup (60 ml) brown sugar


Instructions

  1. Brown the beef in a large pot on medium heat until it is no longer pink and starts to crumble, which should take between 5 to 7 minutes; remove excess fat.
  2. Incorporate the onion and bell pepper, cooking and stirring for an additional 5 minutes.
  3. Mix in the beans, tomato juice, diced tomatoes, and sweet potato puree.
  4. Flavor with pumpkin pie spice, chili powder, and brown sugar.
  5. Let the chili simmer until it thickens and the flavors meld together, approximately 1 hour.
