Ingredients
- 2 pounds ground beef (900 g)
- 1 large onion, diced
- 1 green bell pepper, diced
- 2 (15 ounce) cans kidney beans, drained (425 g each)
- 1 (46 fluid ounce) can tomato juice (1.36 L)
- 1 (28 ounce) can peeled and diced tomatoes with juice (794 g)
- 5 cup (120 ml) canned sweet potato puree
- 1 tablespoon (15 ml) pumpkin pie spice
- 1 tablespoon (15 ml) chili powder
- 25 cup (60 ml) brown sugar
Instructions
- Brown the beef in a large pot on medium heat until it is no longer pink and starts to crumble, which should take between 5 to 7 minutes; remove excess fat.
- Incorporate the onion and bell pepper, cooking and stirring for an additional 5 minutes.
- Mix in the beans, tomato juice, diced tomatoes, and sweet potato puree.
- Flavor with pumpkin pie spice, chili powder, and brown sugar.
- Let the chili simmer until it thickens and the flavors meld together, approximately 1 hour.
