Description

Ingredients

  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the pumpkin puree, sugar, eggs, and vanilla extract until smooth.
  3. In a separate bowl, combine flour, baking soda, ground cinnamon, and salt.
  4. Create a well in the dry ingredients and slowly combine with the wet mixture, folding gently.
  5. Transfer the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in pan for a few minutes before transferring to a wire rack.
