Ingredients
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the pumpkin puree, sugar, eggs, and vanilla extract until smooth.
- In a separate bowl, combine flour, baking soda, ground cinnamon, and salt.
- Create a well in the dry ingredients and slowly combine with the wet mixture, folding gently.
- Transfer the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in pan for a few minutes before transferring to a wire rack.
