Ingredients
- 8 oz pasta
- 1 cup pumpkin puree
- 4 strips bacon, chopped
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside.
- In the same skillet, add the sliced onions and cook until caramelized, about 10-15 minutes. Add the minced garlic and cook for another minute.
- Stir in the pumpkin puree and heavy cream, and heat through. Add Parmesan cheese and mix until well combined.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. Season with salt and pepper to taste.
- Serve topped with crispy bacon and garnish with fresh parsley.
Notes
For added richness, use homemade pumpkin puree. Experiment with herbs like thyme or sage for extra flavor. Adjust seasoning to your preference.
