Ingredients
- 454 g pasta (16 oz), such as fettuccine pasta or any other pasta
- 30 ml vegetable oil (2 tbsp)
- 5 cloves garlic, minced
- 300 ml coconut cream (1 1/4 cups)
- 240 ml pumpkin puree (1 cup)
- 1/2 tsp (3 ml) fine sea salt
- 1/4 tsp (1 ml) ground black pepper
- 1/2 tsp (3 ml) dried sage, or 1 tbsp (15 ml) crumbled/chopped fresh sage or thyme
- 1/2 tsp (3 ml) freshly grated nutmeg, or pre-ground but freshly grated tastes the best here
- 90 g vegan Parmesan cheese (3/4 cup)
- 240-240 ml reserved pasta water, start with 3/4 cup in sauce
Instructions
- Boil the pasta in a large pot of salted water according to the package directions until it reaches a firm yet tender texture. Strain the pasta, saving one cup of the water, and set it aside.
- In a skillet on medium heat, warm the vegetable oil. Add the minced garlic and stir until it becomes fragrant, which should take about 2-3 minutes. Ensure the heat isn’t too high to prevent burning the garlic.
- Gradually add the coconut cream, whisking slowly to blend it with the garlic and oil. Incorporate the pumpkin puree, whisking until the mixture is smooth.
- Season the mixture with sea salt, black pepper, sage or thyme, and nutmeg. Stir energetically to mix everything well.
- Pour in the reserved pasta water and stir to blend. Add the cooked pasta, mixing it with the sauce until it is well coated. Turn off the heat and let the pasta sit in the sauce, stirring occasionally, for an additional 3-5 minutes. Adjust the taste with more pasta water, salt, or vegan Parmesan if needed. You can also mix in extra coconut cream if desired.
- Garnish with extra vegan Parmesan and crispy sage if you like. Enjoy your meal!

- For a richer sauce, gradually add more coconut cream or reserved pasta water until desired consistency is reached.
