Description

A delightful cake that features sweet, juicy plums and apricots, perfect for summer gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • ⅛ tsp ground cloves or nutmeg
  • ½ tsp kosher salt
  • 4 oz unsalted butter
  • 1 ¼ cup granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 2 plums and/or apricots, chopped
  • 1 tbsp turbinado sugar


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, cloves (or nutmeg), and salt.
  3. In a separate bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla and almond extracts.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped plums and/or apricots.
  7. Pour the batter into the prepared cake pan and smooth the top. Sprinkle with turbinado sugar.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cooling before serving.

Notes

For best results, check the freshness of your baking powder and allow the cake to cool in the pan for about ten minutes before transferring to a wire rack.
