Description

Ingredients

  • 1 1/2 Cups All Purpose Flour
  • 2 Large Eggs
  • 1/2 Cup Unsalted Butter
  • 1/4 tsp Salt
  • 1 tsp Baking Powder
  • 3/4 Cup White Sugar
  • 2/3 Cup 2% Milk
  • 1 Package Jell-O Pistachio Pudding Mix
  • 1/4 Cup Chopped Pistachios
  • 1 Cup Icing Sugar
  • 2 Tbsp 2% Milk


Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a large mixing bowl, cream together sugar, eggs, and unsalted butter until smooth.
  3. Add milk, pistachio pudding mix, baking powder, and salt; mix until fully incorporated.
  4. Gently fold in the all-purpose flour until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 40-50 minutes, checking for doneness with a toothpick.
  7. For icing, mix icing sugar and 2 tbsp of milk until smooth and drizzle over the cooled bread.

Notes

For added flavor, consider incorporating almond extract. Top with more chopped pistachios before baking for extra crunch.
