A delightful pineapple rice dish that combines the sweetness of tropical fruit with the nutty aroma of jasmine rice, perfect as a side or light main course.
Ingredients
- 1 cup jasmine rice (not instant)
- 1½ cups water
- 1 tablespoon unsalted butter
- 1 (8 ounce) can crushed pineapple in juice (don’t drain)
- ½ teaspoon kosher salt
- 1 tablespoon granulated sugar
- 1½ tablespoons fresh lime juice
- 2 tablespoons green onion (chopped)
Instructions
- In a medium saucepan, combine jasmine rice, water, butter, crushed pineapple, salt, and sugar. Stir until well combined.
- Heat on medium-high until boiling.
- Reduce heat to a simmer and cover. Cook for 15-20 minutes or until rice is cooked.
- Remove from heat and squeeze fresh lime juice over the top.
- Stir in with a fork to fluff up the rice.
- Serve while hot and garnish with fresh chopped green onions.
Notes
For added depth, consider incorporating vegetables or spices. Serve with grilled chicken or shrimp for a complete meal.
