Description

A delightful pineapple rice dish that combines the sweetness of tropical fruit with the nutty aroma of jasmine rice, perfect as a side or light main course.


Ingredients

  • 1 cup jasmine rice (not instant)
  • 1½ cups water
  • 1 tablespoon unsalted butter
  • 1 (8 ounce) can crushed pineapple in juice (don’t drain)
  • ½ teaspoon kosher salt
  • 1 tablespoon granulated sugar
  • 1½ tablespoons fresh lime juice
  • 2 tablespoons green onion (chopped)


Instructions

  1. In a medium saucepan, combine jasmine rice, water, butter, crushed pineapple, salt, and sugar. Stir until well combined.
  2. Heat on medium-high until boiling.
  3. Reduce heat to a simmer and cover. Cook for 15-20 minutes or until rice is cooked.
  4. Remove from heat and squeeze fresh lime juice over the top.
  5. Stir in with a fork to fluff up the rice.
  6. Serve while hot and garnish with fresh chopped green onions.

Notes

For added depth, consider incorporating vegetables or spices. Serve with grilled chicken or shrimp for a complete meal.
