  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks (either fresh or canned)
  • 1 cup rice (white or brown)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oil (for cooking)
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Start by heating the oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-5 minutes.
  2. Add the diced chicken breast to the skillet. Cook until the chicken is browned and fully cooked, stirring occasionally.
