Ingredients
- 1 lb chicken breast, diced
- 1 cup pineapple chunks (either fresh or canned)
- 1 cup rice (white or brown)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oil (for cooking)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Start by heating the oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-5 minutes.
- Add the diced chicken breast to the skillet. Cook until the chicken is browned and fully cooked, stirring occasionally.
- Incorporate the pineapple chunks, soy sauce, and chicken broth into the skillet. Bring the mixture to a gentle simmer.
- Add the rinsed rice and stir well to combine all the ingredients. Cover the skillet and reduce the heat to low. Allow it to cook for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
