Ingredients
- 2 tablespoons vegetable oil (30g)
- 1 small white onion, chopped (1/2 cup, 75g)
- 1 green bell pepper, seeded and chopped (1/2 cup, 75g)
- 1 pound lean beef, 90/10 blend (450g)
- 1/2 cup beef broth (120ml)
- 1/4 cup tomato paste (60ml)
- 2 tablespoons soy sauce (30ml)
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) sea salt
- 1/2 teaspoon (3 ml) ground black pepper
- 12 slices cheddar cheese, divided
- 6 brioche buns, store-bought or homemade
Instructions
- Sauté the vegetables: Warm vegetable oil in a large pan over medium heat. Add chopped onions and bell peppers, cooking and stirring often until they are tender, about 6 to 7 minutes, without allowing them to brown.
- Brown the meat: Incorporate the lean beef into the pan, using a wooden spoon to crumble it into small bits as it cooks. Continue cooking until the beef is browned, approximately 5 to 6 minutes.
- Add flavor: Mix in the beef broth, tomato paste, soy sauce, garlic powder, sea salt, and ground black pepper. Reduce the heat to low and let it simmer for 4 to 5 minutes until the mixture becomes thick. Dice 6 slices of cheddar cheese into 1/2-inch pieces and blend them into the mixture just before serving.
- Prepare the sloppy joes: Lightly toast the brioche buns using a toaster or toaster oven. Place a slice of cheddar cheese on each half of the buns. Spoon generous portions of the beef mixture over the cheese and cover with the top bun. Serve while warm. If any mixture remains, it can be stored in the refrigerator for 4 to 5 days and reheated in a microwave or skillet with a bit of water or broth.
