Description

A hearty and comforting bowl that captures the flavors of a classic Philly cheesesteak with seasoned ground beef, colorful bell peppers, and a creamy cheese sauce.


Ingredients

  • 1 pound ground beef
  • Kosher salt and ground black pepper, to taste
  • 1 tablespoon butter (or plant-based butter)
  • 1/2 red onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 cups cooked rice
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1-2 teaspoons garlic, minced
  • 1 1/2 cups half-and-half (or dairy-free creamer)
  • 1 cup white cheddar cheese, shredded
  • 1/2 teaspoon ground mustard
  • 1 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper


Instructions

  1. Heat a large cast iron skillet over medium-high heat, add the ground beef, and season with kosher salt and ground black pepper. Cook until browned and fully cooked, then transfer to a bowl to drain excess grease.
  2. Lower the heat to medium and add 1 tablespoon of butter to the skillet. Add the sliced red onion and bell peppers, cooking for 2-3 minutes until soft. Remove and set aside.
  3. In a separate saucepan, melt 2 tablespoons of butter over medium-high heat. Whisk in 3 tablespoons of flour and 1-2 teaspoons of garlic to form a roux. Gradually whisk in the half-and-half until smooth and slightly thickened, then mix in the shredded cheese, ground mustard, and season with salt and pepper.
  4. In serving bowls, layer cooked rice, ground beef, sautéed vegetables, and pour cheese sauce on top. Enjoy!

Notes

For a spicier kick, consider adding diced jalapeños. Serve with a refreshing side salad.
