Ingredients
- 8 flour tortillas, homemade or store-bought
- 8 ounce (227 g) s shredded moz zarella cheese
- 1/3 lb (151 g) beef pepperoni
- 1 16-ounce jar of pizza sauce
- Optional : 1 6-ounce can of sliced black olives, 1 cup (240 ml) of sliced cremini mushrooms
Instructions
- Warm a medium-sized skillet over medium heat and cook the pepperoni until it becomes crispy. Place on a paper towel to absorb excess oil.
- Spread a light coating of pizza sauce on each tortilla, ensuring it’s thin enough that it wouldn’t spill if flipped.
- Layer mozzarella on the sauced side of the bottom tortilla. Add pepperoni and additional toppings, if preferred. Add another layer of mozzarella and cover with another tortilla, keeping the sauced side facing inward.
- Preheat a medium cast-iron skillet over medium heat. Position the quesadilla in the skillet and grill for 3-5 minutes per side, until the cheese melts and the tortillas turn golden.
- Cut into four pieces and serve with a small bowl of pizza sauce for dipping.
