Description

A comforting and flavorful pepper steak recipe cooked in a Crock Pot, bringing back nostalgic family dinner memories.


Ingredients

  • 1.5 pounds beef sirloin or flank steak, sliced thinly against the grain
  • 1 red bell pepper, sliced into bite-sized pieces
  • 1 green bell pepper, sliced into bite-sized pieces
  • 1 yellow bell pepper, sliced into bite-sized pieces
  • 1 medium onion, chopped into bite-sized pieces
  • 3 garlic cloves, minced
  • 1 cup beef broth
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon Worcestershire sauce (or substitute with balsamic vinegar)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (adjust to taste)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (cornstarch slurry)
  • 1-2 tablespoons oil for searing beef
  • Additional crushed red pepper or hot sauce for a spicy twist


Instructions

  1. Slice the beef into thin strips against the grain for tenderness.
  2. Chop the bell peppers and onion into bite-sized pieces.
  3. Mince the garlic cloves for aromatic flavor.
  4. Heat the skillet over high heat and add a splash of oil. Quickly brown the steak strips, approximately 2-3 minutes per side.
  5. Transfer the seared beef to the Crock Pot. Add sliced peppers, chopped onion, and minced garlic.
  6. Pour in the beef broth along with soy sauce and Worcestershire sauce. Season with black pepper and crushed red pepper flakes. Stir gently to combine.
  7. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  8. About 15 minutes before serving, mix cornstarch with cold water to create a slurry. Stir the slurry into the Crock Pot to thicken the sauce. Cook uncovered for the remaining time.
