Description

Delightful peach bellini cupcakes that capture the essence of summer with a fluffy cake and velvety peach frosting.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup champagne or sparkling wine
  • 1/4 cup peach puree
  • For frosting:
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup peach puree (for frosting)
  • Fresh peach slices (for garnish)
  • Sparkling sugar (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix the flour, baking powder, and salt together in a bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy in another bowl.
  4. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  5. Mix in the champagne and peach puree until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter among the cupcake liners and bake for 18-20 minutes. Let cool.
  8. Beat the softened butter for the frosting and gradually add powdered sugar, mixing until smooth.
  9. Add the peach puree and mix until combined.
