Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes, with juice
- 2 cups small pasta (like ditalini or elbow)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Parmesan cheese, for serving
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add ground beef and cook until browned; drain excess fat.
- Add onion, carrots, celery, and garlic; sauté until veggies are tender.
- Stir in beef broth, beans, diced tomatoes, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add pasta and cook until al dente, about 8-10 minutes.
- Serve hot, topped with Parmesan cheese and parsley.
