Description

Ingredients

  • 2 pounds red potatoes
  • 3 tablespoons olive oil
  • 1.5 cups freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the red potatoes thoroughly and cut them into 1-inch cubes.
  3. In a large bowl, combine olive oil, garlic powder, Italian herbs, salt, and black pepper. Mix until the ingredients blend well.
  4. Add the cubed potatoes to the bowl and toss to coat them evenly with the oil and spice mixture.
  5. Spread the coated potatoes on a baking sheet in a single layer to ensure even roasting.
  6. Roast in the oven for about 25 minutes.
  7. Remove the baking sheet, carefully toss the potatoes, and sprinkle the grated Parmesan cheese over the top.
  8. Return the potatoes to the oven for an additional 10-15 minutes until the cheese is golden and crispy.
