Ingredients
- 1 pound breakfast sausage
- 8 large eggs
- 2 cups shredded cheese (cheddar or your choice)
- 4 cups frozen hash browns
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups milk
- Salt and pepper to taste
- Optional: herbs like parsley or chives for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the breakfast sausage in a skillet over medium heat; drain excess fat.
- Grease a 9×13 inch baking dish and layer the frozen hash browns on the bottom.
- Add the cooked sausage, diced bell pepper, and onion.
- Sprinkle the shredded cheese on top.
- In a large bowl, whisk together the eggs and milk, seasoning with salt and pepper.
- Pour the egg mixture over the layered ingredients.
- Cover the dish with foil and refrigerate overnight.
- Remove the foil and bake for 45-55 minutes until the center is set and the top is golden brown.
- Let it rest for a few minutes before serving and garnish with fresh herbs if desired.
