Deliciously creamy Oreo cheesecake bites that combine two beloved treats into one delightful dessert, perfect for parties and gatherings.
Ingredients
- 16 Oreos
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 whole eggs
- 1 tsp. vanilla extract
- 3/4 cup large and small Oreo cookie crumbs
Instructions
- Preheat your oven to 350 degrees F.
- Line a regular cupcake baking pan with 16 paper liners. Place one Oreo cookie in each liner and set aside.
- Beat together the softened cream cheese, sugar, eggs, and vanilla extract in a large mixing bowl for 2-3 minutes until smooth.
- Sprinkle in the cookie crumbs and gently fold them in with a spatula until combined.
- Spoon the Oreo cheesecake mixture evenly on top of each Oreo cookie, filling each cup about two-thirds full.
- Sprinkle the tops with reserved Oreo cookie crumbs.
- Bake for 14-16 minutes, or until the centers are set. Be careful not to over-bake.
- Cool for at least 30 minutes before removing the paper wrappers and refrigerating until ready to serve.
Notes
Chill for about 2 hours before serving to deepen flavors. For a fun presentation, top with whipped cream and additional Oreo crumbs.
