Description

A delightful cake combining sweet honey with fresh oranges and a hint of ginger, perfect for gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt
  • ½ cup unsalted butter (melted)
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • 2 tbsp honey (for glaze)
  • 2 tbsp orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. Whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt in a medium bowl until combined.
  3. Mix together the melted butter, honey, and eggs in a separate bowl until well incorporated.
  4. Stir in the fresh orange juice, orange zest, and grated ginger.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into your prepared pan and bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  7. Brush the warm cake with the honey-orange glaze as soon as it’s out of the oven.
  8. Allow the cake to cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.

Notes

Use fresh ginger for a vibrant flavor and adjust spices based on preference. Let the cake sit overnight for deeper flavors.
