Ingredients

  • Russet potatoes, 4 large
  • Olive oil, 2 tablespoon s (30 ml)
  • Salt, to taste
  • Ground beef, 1 pound (454 g) (450 grams)
  • BBQ sauce, 1/2 cup (120 ml)
  • Cheddar cheese, shredded, 1 cup (240 ml) (100 grams)
  • Turkey bacon, 4 strips
  • Green onions, chopped, 2 tablespoon (30 ml) s (10 grams)
  • Sour cream, 1/2 cup (120 ml)
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the russet potatoes.
  3. Rub each potato with olive oil and sprinkle with salt.
  4. Place the potatoes on a baking sheet.
  5. Bake the potatoes for 45-60 minutes until tender.
  6. While potatoes bake, cook turkey bacon in a skillet until crispy.
  7. Remove bacon from skillet and crumble once cooled.
  8. In the same skillet, brown the ground beef over medium heat.
  9. Drain excess fat from the beef.
  10. Stir BBQ sauce into the cooked beef.
  11. Slice the baked potatoes lengthwise and scoop out some flesh.
  12. Mix the scooped potato flesh with sour cream, salt, and pepper.
  13. Fill each potato with the BBQ beef mixture.
  14. Top with shredded cheddar cheese.
  15. Return the stuffed potatoes to the oven for 5-10 minutes to melt cheese.
  16. Remove from oven and garnish with crumbled bacon and chopped green onions.
  17. Serve hot.
