Ingredients
- Whole Pumpkin (2.2 kg)
- Beef tallow or vegetable oil
- 1 Diced onion
- 1 Sweet Potato
- 3 Cloves of garlic
- Lane’s Everything Toasted Bagel
- Chicken stock
Instructions
- Divide the pumpkin into four equal parts and remove the seeds. Cut the sweet potato into similarly sized pieces.
- Sprinkle the pumpkin with Everything Toasted Bagel seasoning.
- Preheat the smoker to 135°C (275°F).
- Once the smoker reaches the desired temperature, place the pumpkin and sweet potato pieces inside and smoke them for about an hour or until they are tender enough to pierce with a fork.
- In a saucepan, heat the beef tallow or vegetable oil and cook the onion and garlic until they become clear and soft.
- Pour in 1 liter of chicken stock and add the smoked vegetables into the pot, allowing the mixture to simmer for 30 minutes.
- Use an immersion blender to puree the soup to your preferred texture.
- Season with salt and pepper according to your taste.
- Serve the soup in a bowl and optionally add a swirl of cream on top.
- Toast some bread with cheese and serve it as a side for dipping into the soup.
