Ingredients

  • 1 1/2 lbs (680 g) ground beef
  • 1 onion, diced
  • 4 cloves garlic, crushed
  • 2 cans kidney beans, drained & rinsed
  • 128 oz (3.8 L) can diced tomatoes
  • 16 oz (473 ml) can tomato paste
  • 5 oz (411 g) can green chilies
  • 3 cups (710 ml) chicken broth or water and 2 tsp chicken bullion powder
  • SPICES:
  • 2 tbsp (30 ml) chili powder
  • 1/2 tsp (2.5 ml) salt
  • 2 tsp (10 ml) cumin
  • 1 tsp (5 ml) dried oregano
  • 1/4 tsp (1.25 ml) cayenne pepper
  • 1 tsp (5 ml) hot sauce
  • 1 tsp (5 ml) sugar
  • Note: can substitute 110 oz (311 g) can of diced tomatoes with chopped green chilies along with 1 other can of plain diced tomatoes for the 28-ounce can and green chilies.


Instructions

  1. In a large cooking pot, brown the beef and remove any extra grease. Incorporate the onion and garlic, cooking them until they are tender.
  2. Mix in all the seasonings, beans, chilies, tomatoes, and broth, and bring the mixture to a rolling boil. Lower the heat to medium-low and let it gently cook uncovered for 30 minutes.
  3. Top with grated cheddar cheese and a dollop of sour cream. Accompany with corn bread.

Notes

  • Use lean ground beef for a healthier chili with less grease.
  • Adjust spice level with hot sauce and cayenne to your taste.
  • Simmer uncovered longer to thicken chili and intensify flavors.
