Ingredients

  • 1 1/2 lb (680 g) Chicken Breast, cut into 1/2-inch strips
  • 2 tbsp (30 ml) Taco Seasoning (see recipe below)
  • 2 tbsp (30 ml) Lime Juice
  • 2 tbsp (30 ml) Oil
  • 1/2 Medium White Onion, chopped
  • 1 15 oz (425 g) can Black Beans, drained
  • 1 1/2 lb (680 g) Beef Strips
  • 1 qt (946 ml) Chicken Broth
  • 1 18 oz (510 g) can Tomato Sauce
  • 1 cup (240 ml) Coconut Cream
  • 3 cups (340 g) Vegan Cheese, shredded
  • 1/2 cup (120 ml) Cilantro, chopped


Instructions

  1. Mix together the chicken strips, lime juice, and taco seasoning in a bowl.
  2. In a large sauté pan over medium-high heat, pour in the oil. Once heated, add chopped onions and the seasoned chicken. Cook for approximately 5 minutes, stirring frequently.
  3. Introduce the black beans, tomato sauce, and chicken broth into the pan. Allow the mixture to start bubbling, then lower the heat to medium. Ensure all pasta is immersed, cover with a lid, and cook for 20 minutes.
  4. Uncover the pan and pour in the coconut cream and shredded vegan cheese. Stir everything together. Cover again and continue cooking for another 5 minutes.
  5. Garnish with chopped cilantro before serving.

  • Marinate chicken in taco seasoning and lime juice for richer flavor.
  • Swap chicken broth for vegetable broth for a vegetarian option.
