Ingredients

  • 1 tablespoon minced garlic (15 ml)
  • 1 tablespoon minced fresh rosemary leaves (15 ml)
  • 1 tablespoon minced fresh oregano leaves (15 ml)
  • 1 tablespoon minced fresh basil (15 ml)
  • 1 tablespoon olive oil, plus more to taste (15 ml)
  • 1 tablespoon lemon juice (15 ml)
  • salt, to taste
  • black pepper, to taste
  • 4 skinless salmon fillets
  • 1 large zucchini, chopped
  • 1 cup sliced mushrooms (150 g)
  • 1 yellow bell pepper, seeded and sliced
  • 1 pt cherry tomatoes, halved (240 g)


Instructions

  1. Set your oven to preheat at 400°F (200°C) and prepare a baking sheet by covering it with parchment paper.
  2. In a small bowl, mix together the garlic, rosemary, oregano, basil, olive oil, lemon juice, and a dash of salt and pepper. Stir the mixture thoroughly.
  3. Position the salmon fillets, with the skin side facing up, on one half of the lined baking sheet and coat them with a third of the herb mixture. Turn the fillets over and apply the remaining two-thirds of the herb mixture.
  4. Arrange the zucchini, mushrooms, bell pepper, and tomatoes on the opposite side of the baking sheet. Drizzle them with olive oil and sprinkle with salt and pepper to your preference, then mix well to ensure everything is evenly coated.
  5. Place in the oven and cook for 30 minutes, or until the tomatoes are soft and bursting, and the salmon is tender and flakes easily.
