Ingredients

  • – 1.5 lbs (680 g) Shrimp, peeled & deveined
  • – 1/4 cup (60 ml) Minced Garlic
  • – 2 tbsp (30 g) Cornstarch
  • – 1/4 cup (60 ml) Smoked Jalapeno Lager Rub
  • – 6 tbsp (85 g) Ghee
  • – 2 tbsp (30 ml) Vegetable Oil
  • – 1 medium Lemon, juiced
  • – Chopped Green Onions, for garnish

Instructions

  1. Ignite a direct-heat fire to reach a medium-high temperature of around 350°F and place a cast iron skillet on the heat about 60 seconds before starting to cook.
  2. Ensure your shrimp are thoroughly dry, then coat them liberally with the Smoked Jalapeno Lager Rub and cornstarch.
  3. Begin by heating vegetable oil and ghee in the skillet until melted.
  4. Introduce the minced garlic to the skillet and allow it to become golden brown for about 90 seconds.
  5. Place the shrimp in the skillet in small groups, avoiding overcrowding, and cook them on one side for approximately 90 seconds, then turn them over.
  6. Continue cooking the shrimp for an additional 1-2 minutes until they are cooked through. Once done, remove the skillet from the heat source to let it cool down.
  7. Sprinkle with chopped green onions and drizzle with lemon juice before serving. Enjoy!

Notes

  • Pat shrimp dry before coating with rub and cornstarch for a crispy exterior.
  • Avoid overcrowding the skillet when cooking shrimp to ensure even cooking.
  • Enhance the dish with fresh lemon juice for a bright and zesty flavor.
