One-pan Creamy Chicken Bacon Ranch Tortellini

Ingredients

  • 8 strips of beef bacon
  • 1 (20 ounce (567 g)) package cheese tortellini, (fresh or froz en)
  • 2 cup (480 ml) s cooked, shredded chicken OR two small chicken breasts, cooked and shredded or cubed, (I used store-bought shredded rotisserie chicken found near the deli section of my grocery store)
  • 3/4 cup (180 ml) half-and-half, (or heavy cream)
  • 3/4 cup (180 ml) shredded moz zarella cheese
  • 2 tablespoon (30 ml) s homemade ranch seasoning, (or 2 tablespoon (30 ml) s store-bought dry ranch mix)
  • 11/2 teaspoon (28 ml) s garlic powder
  • Salt and pepper, (to taste)


Instructions

  1. In a large skillet, fry the beef bacon on medium heat until it is crispy, about 8-10 minutes. Take it off the heat and place it on a plate lined with paper towels to absorb the excess fat. Once it has cooled a bit, chop it into pieces.
  2. While the bacon is frying, prepare the tortellini as directed on the package. Once cooked, drain the tortellini and put it back in the pot.
  3. Combine the chopped bacon, chicken, half-and-half, mozzarella, ranch seasoning, garlic powder, salt, and pepper with the tortellini. Mix thoroughly and heat on low until the cheese begins to melt and the chicken is warmed through.
  4. Taste and adjust the seasoning if necessary, then serve right away.
