A comforting and creamy old-fashioned potato soup made with simple ingredients that evoke nostalgic flavors.
Ingredients
- 0.25 cup butter
- 1 large onion, chopped
- 6 potatoes, peeled and diced
- 2 carrots, diced
- 3 cups water
- 2 tablespoons chicken bouillon powder
- Ground black pepper to taste
- 3 tablespoons all-purpose flour
- 3 cups milk
- 1 tablespoon dried parsley
- 0.25 teaspoon dried thyme
Instructions
- Melt butter in a saucepan over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- In another pot, combine diced potatoes, carrots, water, and chicken bouillon powder. Bring to a boil and cook until vegetables are tender, about 10 minutes.
- Season with black pepper.
- Stir flour into the softened onions to create a paste and cook for 2 minutes, stirring constantly.
- Gradually stir in the milk and cook over low heat until warmed through.
- Add the potato and carrot mixture and stir in parsley and thyme.
Notes
For a thicker soup, increase the flour or let it simmer longer. Optional vegetables, like celery or corn, can be added for variation.
