Description

A comforting and creamy old-fashioned potato soup made with simple ingredients that evoke nostalgic flavors.


Ingredients

  • 0.25 cup butter
  • 1 large onion, chopped
  • 6 potatoes, peeled and diced
  • 2 carrots, diced
  • 3 cups water
  • 2 tablespoons chicken bouillon powder
  • Ground black pepper to taste
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1 tablespoon dried parsley
  • 0.25 teaspoon dried thyme


Instructions

  1. Melt butter in a saucepan over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. In another pot, combine diced potatoes, carrots, water, and chicken bouillon powder. Bring to a boil and cook until vegetables are tender, about 10 minutes.
  3. Season with black pepper.
  4. Stir flour into the softened onions to create a paste and cook for 2 minutes, stirring constantly.
  5. Gradually stir in the milk and cook over low heat until warmed through.
  6. Add the potato and carrot mixture and stir in parsley and thyme.

Notes

For a thicker soup, increase the flour or let it simmer longer. Optional vegetables, like celery or corn, can be added for variation.
