Description

Delicious and nutritious oat peanut butter date balls that are vegan and gluten-free, perfect for a quick snack or energy boost.


Ingredients

  • 1 cup pitted dates (approximately 12-13 dates)
  • ½ cup rolled oats
  • ¼ cup creamy unsalted peanut butter
  • 2 tablespoons dark chocolate chips or cacao nibs


Instructions

  1. Blend the pitted dates into a sticky paste. If they feel dry, soak them in hot water for about 10 minutes and drain before blending.
  2. Add the rolled oats and peanut butter to the date paste and blend until a thick dough forms.
  3. Mix in the dark chocolate chips or cacao nibs until evenly distributed throughout the dough.
  4. Scoop out a portion of the mixture and roll it into a ball shape, lightly wetting your hands if needed to prevent stickiness. Aim for about 12 balls in total.
  5. Enjoy them immediately, or store them in the refrigerator for later.

Notes
