Ingredients
5 large eggs room temperature
2 cups sour cream room temperature
4 packages (8 oz (227 g)) cream cheese room temperature
8 tablespoons unsalted butter room temperature
1.5 cups sugar
2 tablespoons cornstarch
1.5 teaspoons vanilla powder
1 teaspoon fresh lemon juice
1 teaspoon grated lemon zest
Instructions
1. 1. Grease a 10-inch springform pan with butter. Encase the exterior with heavy-duty aluminum foil.
2. 2. Set the oven to a temperature of 300°F (150°C).
3. 3. In a spacious bowl, whisk together eggs and sour cream until they blend smoothly. In a separate bowl, mix cream cheese and butter until the texture is creamy.
4. 4. Merge both mixtures and incorporate sugar, cornstarch, vanilla powder, lemon juice, and lemon zest. Whisk until the batter is smooth, approximately 2 minutes.
5. 5. Transfer the mixture into the prepared pan. Set the pan inside a large roasting pan and fill with hot water, reaching halfway up the sides of the springform pan.
6. 6. Cook for 2 hours and 15 minutes, until the top is a light golden color and a knife inserted in the center comes out clean.
7. 7. Take the pan out of the water bath, remove the foil, and let it cool at room temperature for 4 hours.
8. 8. Wrap and chill in the refrigerator overnight before serving.
