  • 1 1/2 cups chopped onion (375 g)
  • 4 cups peeled and cubed potatoes (600 g)
  • 1 1/2 cups water (360 ml)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper to taste
  • 3 cups whole milk
  • 3 tablespoons vegetable oil
  • 2 (10 ounce) cans minced clams (566 g)


Instructions

  1. Prepare all the necessary components.
  2. Place the chopped beef bacon in a large pot on medium-high heat; cook and mix until nearly crispy. Add the onions and sauté, stirring occasionally, until soft, roughly 5 minutes.
  3. Mix in the potatoes and pour in the water; add salt and black pepper, then bring the mixture to a boil. Lower the heat and let it gently simmer, uncovered, until the potatoes are soft, approximately 15 minutes.
  4. Add the milk to the pot and stir in the vegetable oil.
  5. Drain the clams, keeping the liquid aside; incorporate the clams and half of their reserved liquid into the mixture. Heat through thoroughly without bringing it to a boil, for roughly 5 minutes.
