- 4 slices beef bacon
- 1 1/2 cups chopped onion (375 g)
- 4 cups peeled and cubed potatoes (600 g)
- 1 1/2 cups water (360 ml)
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper to taste
- 3 cups whole milk
- 3 tablespoons vegetable oil
- 2 (10 ounce) cans minced clams (566 g)
Instructions
- Prepare all the necessary components.
- Place the chopped beef bacon in a large pot on medium-high heat; cook and mix until nearly crispy. Add the onions and sauté, stirring occasionally, until soft, roughly 5 minutes.
- Mix in the potatoes and pour in the water; add salt and black pepper, then bring the mixture to a boil. Lower the heat and let it gently simmer, uncovered, until the potatoes are soft, approximately 15 minutes.
- Add the milk to the pot and stir in the vegetable oil.
- Drain the clams, keeping the liquid aside; incorporate the clams and half of their reserved liquid into the mixture. Heat through thoroughly without bringing it to a boil, for roughly 5 minutes.
