Description

A heartwarming family favorite, Nana’s chicken dish features marinated chicken with fresh herbs and rich flavors, perfect for gatherings.


Ingredients

  • Chicken (breasts or thighs)
  • Olive oil
  • Garlic
  • Fresh herbs (thyme, rosemary, parsley)
  • Salt
  • Black pepper
  • Lemon juice
  • Seasonal vegetables (bell peppers or zucchini)


Instructions

  1. Marinate the chicken by mixing olive oil, minced garlic, lemon juice, chopped herbs, salt, and pepper in a bowl.
  2. Coat the chicken thoroughly in the marinade and let it sit for at least 30 minutes, or overnight.
  3. Preheat the oven to 375°F (190°C).
  4. Arrange the marinated chicken in a baking dish and place veggies around the sides.
  5. Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Allow the chicken to rest for a few minutes before serving.
