Ingredients
- Chicken (breasts or thighs)
- Olive oil
- Garlic
- Fresh herbs (thyme, rosemary, parsley)
- Salt
- Black pepper
- Lemon juice
- Seasonal vegetables (bell peppers or zucchini)
Instructions
- Marinate the chicken by mixing olive oil, minced garlic, lemon juice, chopped herbs, salt, and pepper in a bowl.
- Coat the chicken thoroughly in the marinade and let it sit for at least 30 minutes, or overnight.
- Preheat the oven to 375°F (190°C).
- Arrange the marinated chicken in a baking dish and place veggies around the sides.
- Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Allow the chicken to rest for a few minutes before serving.
Notes
For best results, use a meat thermometer to prevent overcooking. Fresh herbs can be added as a garnish for extra flavor.
