Deliciously moist banana bread muffins made with ripe bananas, perfect for a comforting snack or breakfast.
Ingredients
- 2-3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix the melted butter with the mashed bananas.
- Stir in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract, and mix well.
- Finally, mix in the flour until just combined.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes until a toothpick inserted comes out clean.
- Let them cool before serving.
Notes
For extra flavor, consider adding nuts or chocolate chips. Store leftover muffins in an airtight container for up to two days or freeze for three months.
