Description

Indulge in the perfect blend of rich chocolate and refreshing mint with these delicious mint brownies, perfect for any gathering.

Ingredients

  • 1 cup unsalted butter (2 sticks)
  • 12 ounces semi-sweet chocolate chips
  • 4 large eggs
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 cup all-purpose flour
  • 3/4 cup unsalted butter (softened, for frosting)
  • 16 ounces powdered sugar
  • 2-4 tablespoons milk or cream
  • 1 teaspoon mint extract
  • Green food coloring
  • 1 cup chopped semi-sweet chocolate

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×9-inch baking pan.
  2. Place the 1 cup of unsalted butter and chocolate chips in a large microwave-safe bowl and heat in 30-second intervals until melted.
  3. Whisk together the eggs and granulated sugar in a separate bowl using an electric mixer until well combined.
  4. Combine the cooled chocolate mixture with the egg and sugar mixture, blending until fully mixed.
  5. Add in the baking powder, salt, and flour, mixing until just combined.
  6. Pour the brownie batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, checking for doneness with a toothpick.
  8. Allow the brownies to cool completely before frosting.
  9. Make the frosting by mixing softened butter, powdered sugar, mint extract, and milk until creamy, adding coloring as desired.
  10. Frost the cooled brownies and enjoy!

Notes

For chewier brownies, consider adding an extra egg or reducing the flour. Store in an airtight container for up to one week.
