Description

A creamy and crunchy casserole featuring ground turkey, pasta, and savory ranch seasoning, perfect for busy weeknights or gatherings.


Ingredients

  • 1 pound ground turkey
  • 8 ounces small shelled pasta
  • 8 ounces cream cheese (room temperature)
  • 1 cup cottage cheese (or whole milk ricotta cheese)
  • 1.5 cups milk
  • 1 packet ranch seasoning
  • 2 sleeves Ritz crackers (crumbled)
  • 6 tablespoons melted butter
  • Salt and pepper to taste


Instructions

  1. In a frying pan, brown the ground turkey and season lightly with salt and pepper.
  2. In a bowl, combine cream cheese, cottage cheese, milk, and ranch seasoning. Taste to adjust seasoning.
  3. Preheat the oven to 350°F and cook the pasta according to the package instructions.
  4. While the noodles boil, crush the Ritz crackers and mix them with melted butter.
  5. Once the noodles are drained, mix them with the ground turkey and creamy sauce.
  6. Add half the buttered Ritz crackers to the bottom of a baking dish.
  7. Spread the noodle and turkey mixture over the crackers and then top with the remaining buttered crackers.
  8. Bake for 20-25 minutes or until the top is golden brown.
  9. Allow the casserole to cool slightly before serving.

Notes

For extra flavor, consider adding shredded cheese or vegetables like spinach or bell peppers to the mixture.
