- 3/4 cup (180 ml) grated plant-based parmesan cheese (plus more for topping)
- 1 large egg
- 1/4 cup (60 ml) breadcrumbs or almond flour
- 1/4 cup (60 ml) dairy-free milk (or unsweetened almond milk for dairy-free)
- 1 tsp (5 ml) Italian seasoning
- 1/2 tsp (3 ml) salt
- 1/2 tsp (3 ml) ground black pepper
- 2 tbsp (30 ml) chopped fresh parsley (or 1 tbsp (15 ml) dried)
- Cooking spray or parchment paper
Instructions
- Set the oven to 375°F (190°C) and prepare a 9×5 loaf pan by lightly coating it with cooking spray or lining it with parchment paper.
- In a big bowl, mix together the ground beef, plant-based parmesan, minced garlic, breadcrumbs, and parsley.
- Incorporate the egg, dairy-free milk, Italian seasoning, salt, and black pepper. Mix gently using your hands or a spatula, ensuring not to overdo it.
- If the mixture appears too moist, add an extra tablespoon of breadcrumbs or parmesan cheese.
- Put the mixture into the prepared loaf pan, pressing and shaping it to distribute evenly.
- Top with extra parmesan cheese to create a golden crust on top.
- Place in the oven and cook for 40–45 minutes, or until it reaches an internal temperature of 165°F (74°C).
- Allow the meatloaf to rest in the pan for 10 minutes before cutting and serving.
Notes
- Consider using a mix of fresh and dried parsley for a more robust flavor profile.
- Adjust the seasoning to taste by adding more Italian seasoning or salt.
- Ensure the loaf pan is well coated with cooking spray or parchment paper to prevent sticking.
