Ingredients

  • 5 lbs ground beef (680 g)
  • 4 cloves fresh garlic, minced
  • 3/4 cup (180 ml) grated plant-based parmesan cheese (plus more for topping)
  • 1 large egg
  • 1/4 cup (60 ml) breadcrumbs or almond flour
  • 1/4 cup (60 ml) dairy-free milk (or unsweetened almond milk for dairy-free)
  • 1 tsp (5 ml) Italian seasoning
  • 1/2 tsp (3 ml) salt
  • 1/2 tsp (3 ml) ground black pepper
  • 2 tbsp (30 ml) chopped fresh parsley (or 1 tbsp (15 ml) dried)
  • Cooking spray or parchment paper


Instructions

  1. Set the oven to 375°F (190°C) and prepare a 9×5 loaf pan by lightly coating it with cooking spray or lining it with parchment paper.
  2. In a big bowl, mix together the ground beef, plant-based parmesan, minced garlic, breadcrumbs, and parsley.
  3. Incorporate the egg, dairy-free milk, Italian seasoning, salt, and black pepper. Mix gently using your hands or a spatula, ensuring not to overdo it.
  4. If the mixture appears too moist, add an extra tablespoon of breadcrumbs or parmesan cheese.
  5. Put the mixture into the prepared loaf pan, pressing and shaping it to distribute evenly.
  6. Top with extra parmesan cheese to create a golden crust on top.
  7. Place in the oven and cook for 40–45 minutes, or until it reaches an internal temperature of 165°F (74°C).
  8. Allow the meatloaf to rest in the pan for 10 minutes before cutting and serving.
