A refreshing and flavorful Mediterranean potato salad featuring tender potatoes, cherry tomatoes, feta cheese, and fresh herbs.
Ingredients
- 2 lbs potatoes, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- Juice of 1 lemon
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool completely.
- In a large mixing bowl, combine the cooled potatoes, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced black olives, crumbled feta cheese, chopped parsley, and basil.
- In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad mixture, then toss gently to combine all the ingredients.
- Chill the salad for at least 30 minutes before serving to allow flavors to meld. Serve chilled or at room temperature.
Notes
For optimal flavor, prepare the salad a few hours in advance. Feel free to experiment with different herbs or add protein like grilled chicken or chickpeas.
