Description

A refreshing and flavorful Mediterranean potato salad featuring tender potatoes, cherry tomatoes, feta cheese, and fresh herbs.


Ingredients

  • 2 lbs potatoes, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • Salt and pepper to taste


Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool completely.
  2. In a large mixing bowl, combine the cooled potatoes, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced black olives, crumbled feta cheese, chopped parsley, and basil.
  3. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad mixture, then toss gently to combine all the ingredients.
  5. Chill the salad for at least 30 minutes before serving to allow flavors to meld. Serve chilled or at room temperature.

Notes

For optimal flavor, prepare the salad a few hours in advance. Feel free to experiment with different herbs or add protein like grilled chicken or chickpeas.
