Ingredients
- 4 large eggs
- 1 cup baby spinach, chopped
- 1 cup cherry tomatoes, halved
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1/4 cup feta cheese, crumbled
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- In a bowl, whisk the eggs with salt and pepper until combined and slightly frothy.
- Heat olive oil or butter in a skillet over medium heat.
- Add minced garlic and sauté for one minute until fragrant.
- Add tomatoes and green onions, cooking for another two to three minutes until softened.
- Stir in baby spinach and cook until wilted, about one minute.
