Description

  • 4 large eggs
  • 1 cup baby spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter


Instructions

  1. In a bowl, whisk the eggs with salt and pepper until combined and slightly frothy.
  2. Heat olive oil or butter in a skillet over medium heat.
