Description

Ingredients

  • – 2 (425g) cans chickpeas, drained and rinsed
  • – 1 large cucumber, diced
  • – 1 red bell pepper, diced
  • – 2 cups (300g) cherry tomatoes, halved
  • – ¼ cup (60ml) red onion, diced
  • – 4 ounces (113g) feta cheese, crumbled
  • – ¼ cup (15g) finely chopped parsley
  • – lemon vinaigrette, you can use as much or as little as you’d like


Instructions

  1. Combine. Place all of the components into a sizable bowl and mix them together.
  2. Blend. Drizzle the lemon dressing over the mixture and carefully mix until everything is thoroughly integrated.

Notes

  • For a smoother consistency, lightly mash some of the chickpeas before mixing.
