Ingredients
- – 2 (425g) cans chickpeas, drained and rinsed
- – 1 large cucumber, diced
- – 1 red bell pepper, diced
- – 2 cups (300g) cherry tomatoes, halved
- – ¼ cup (60ml) red onion, diced
- – 4 ounces (113g) feta cheese, crumbled
- – ¼ cup (15g) finely chopped parsley
- – lemon vinaigrette, you can use as much or as little as you’d like
Instructions
- Combine. Place all of the components into a sizable bowl and mix them together.
- Blend. Drizzle the lemon dressing over the mixture and carefully mix until everything is thoroughly integrated.
Notes
- For a smoother consistency, lightly mash some of the chickpeas before mixing.
