Description

Classic meaty enchiladas filled with seasoned ground beef, enchilada sauce, and melty cheese—perfect for family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cups red enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup fresh toppings (sour cream, guacamole, diced tomatoes, cilantro)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the chopped onion until translucent. Add the ground beef and cook until browned. Drain excess fat.
  3. Stir in 1 cup of the red enchilada sauce and simmer for 5 minutes.
  4. In a baking dish, spread a thin layer of the remaining enchilada sauce.
  5. Fill each tortilla with the beef mixture, sprinkle some cheese, roll it up, and place seam-side down in the baking dish. Repeat with remaining tortillas.
  6. Pour the rest of the enchilada sauce over the rolled tortillas and top with remaining cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Serve hot with your choice of fresh toppings.

Notes

Preheating the tortillas makes them easier to roll. Experiment with different cheese blends for variety.
