Description

A heartwarming classic meatloaf recipe topped with rich and flavorful mushroom gravy, perfect for family dinners.


Ingredients

  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • Salt and freshly ground black pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a casserole dish or line a baking sheet with parchment paper.
  2. In a mixing bowl, combine fresh ground beef, breadcrumbs, chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, thyme, oregano, and season with salt and pepper.
  3. Mix gently with your hands until just combined and shape into a loaf.
  4. Transfer the loaf to the prepared dish and bake for 50-60 minutes, or until a meat thermometer reads 160°F (71°C).
  5. For the mushroom gravy, melt unsalted butter in a skillet over medium heat, add sliced mushrooms, and cook until golden brown, about 5-7 minutes.
  6. Sprinkle flour over mushrooms and stir for about 2 minutes.
  7. Gradually whisk in beef broth, then heavy cream, and stir until the gravy is velvety, about 5-7 minutes. Season with salt and pepper.
  8. Let the meatloaf rest for a few minutes, slice, and serve with mushroom gravy draped over each slice.

Notes

Allowing the meatloaf to rest after baking helps retain the juices and makes slicing easier. For added flavor, consider using fresh herbs instead of dried.
