Ingredients
- 2 lbs Yukon Gold potatoes, cut into 3/4-inch cubes
- 1 medium yellow onion, chopped
- 1 red bell pepper, chopped
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon fresh rosemary, finely chopped
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the Yukon Gold potatoes, chopped onion, and red bell pepper with olive oil.
- Add smoked paprika, rosemary, kosher salt, and black pepper to the mix, ensuring an even coating.
- Spread the mixture in a single layer on a baking sheet.
- Roast the potatoes for 30-35 minutes, flipping halfway through.
- Once crispy and tender, remove from the oven and garnish with fresh parsley.
