Ingredients

  • 2 cups all-purpose flour (240 g)
  • 1 cup yellow cornmeal (150 g)

  • 1/4 cup granulated sugar (50 g)
  • 1 cup buttermilk (240 ml)
  • 2 large eggs
  • 1/3 cup honey (115 g)
  • 1/4 cup melted unsalted butter (60 g)
  • 1/4 cup maple syrup (60 ml)
  • 1 cup shredded cheddar cheese (115 g)
  • 1/2 cup cooked beef bacon, chopped (75 g)
  • 1/2 cup barbecue sauce (120 ml)


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin pan.
  2. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of yellow cornmeal, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1/4 cup of granulated sugar.
  3. In a separate bowl, whisk together 1 cup of buttermilk, 2 large eggs, 1/3 cup of honey, and 1/4 cup of melted unsalted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in 1 cup of shredded cheddar cheese and 1/2 cup of chopped cooked beef bacon.
  6. Spoon a tablespoon of the batter into each muffin cup of the prepared pan.
  7. Add a teaspoon of barbecue sauce into the center of each muffin cup.
  8. Cover the barbecue sauce in each cup with more batter until the muffin cups are about 3/4 full.
  9. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove the pan from the oven and let the cornbread bombs cool for a few minutes in the pan.
  11. In a small bowl, mix 1/4 cup of maple syrup with a little melted butter if desired.
